Paradox Thyme - Sandy

Sandy Courneen

Hi, I’m Sandy Courneen and I've attended cooking classes like these for over 30 years. Add to that my years as a private caterer and now a retired school teacher, and you have someone who is eager to share what she has learned with others. I love cooking for friends, and making new ones over a good meal.

Paradox Thyme - venue

Paradox Thyme, created in May 2017, offers residents and vacationers a unique dining opportunity through cooking classes that are affordable and informative. Customers enjoy a relaxed home atmosphere where conversation, laughter and learning how to prepare each item on the menu is fun.

The home itself, is an Adirondack gem, dating from the early 1930s. It was originally a granary placed on runners during the winter and moved downhill to its present spot overlooking Paragon Brook, Paradox Creek, and Hoffman Mountain. Located in the quaint hamlet of Paradox, NY at the corner of Route 74 and Letsonville Rd, the home abounds with history and beautiful gardens.

Paradox Thyme - Terry

Terry Courneen

Hello, I am Sandy's other half, and have been her loyal supporter for over 30 years. A retired contractor, I settled in to Paradox living with thoughts of fishing and outdoor life at its best in the Adirondacks. I also love cooking and entertaining, good wine, good music and sharing time with friends.

Upcoming Class Menus:

What a winter!! We've had snow, ice, rain, ice and more snow...and let's not forget the ice. Now that we are into MUD season, we are all about springtime renewal, and what could be better than some fun nights cooking new or fabulous classic recipes? We say, "Let's get started now!" We begin with some grilling fun and special sides, add a class or two on sushi making, a few great Chinese and Korean dishes, a wonderful Greek shrimp dish, and Italian favorites of ours, some tasty appetizers like bang-bang shrimp, arancini, hot or sticky wings and more, and we are ready to go. Let's heat it up! Guest chef appearances will be posted along with our regular class offerings. Keep checking back for dates and times. As ever, beverages are included along with the recipes. $50.00 per person. Something new: Kids Time at Paradox Thyme this summer. We are planning morning and afternoon sessions for the kiddos aged 6 and up. What could be more fun than a new experience for those hungry minds and tummies? $30.00 per person.
