Hi, I’m Sandy Courneen and I've attended cooking classes like these for over 30 years. Add to that my years as a private caterer and now a retired school teacher, and you have someone who is eager to share what she has learned with others. I love cooking for friends, and making new ones over a good meal.

Paradox Thyme - venue

Paradox Thyme, created in May 2017, offers residents and vacationers a unique dining opportunity through cooking classes that are affordable and informative. Customers enjoy a relaxed home atmosphere where conversation, laughter and learning how to prepare each item on the menu is fun.

The home itself, is an Adirondack gem, dating from the early 1930s. It was originally a granary placed on runners during the winter and moved downhill to its present spot overlooking Paragon Brook, Paradox Creek, and Hoffman Mountain. Located in the quaint hamlet of Paradox, NY at the corner of Route 74 and Letsonville Rd, the home abounds with history and beautiful gardens.

Hello, I am Sandy's other half, and have been her loyal supporter for over 30 years. A retired contractor, I settled in to Paradox living with thoughts of fishing and outdoor life at its best in the Adirondacks. I also love cooking and entertaining, good wine, good music and sharing time with friends.

What do you get when you mix bass, or other firm fleshed fish with tomatoes, onions, garlic, chili powder and more? You get an awesome fish chili that will make mouths water! Let’s add homemade taco chips on the side (just for fun), and spiralized zucchini to a mixed green salad! Ahhhh, now let’s have cream cheese brownies for dessert. The white wine is in the fridge and the red wine is uncorked on the counter. C’mon over! ($45.00 per person)

As the winds pick up and the temperatures drop, the fire's warming your toes and now, here’s dinner: Sandy's "Clams 'N' Broccoli"! We've added Broccoli to our savory Fresh Clam sauce over linguine, and topped it with grated Romano cheese;(Oh yes, we are talking fresh clams, and freshly grated cheese); Fresh tomato, olive, vegetable appetizer; Melon salad with a hint of spice over greens; Quick and easy "Killer Bread", Homemade Ice Cream with chocolate shavings and whipped cream. Is it really cold outside, because it’s warm and toasty here! Join us for a toast to sunny days ahead! ($45.00 per person) Yummm Time!!!
